Honey Dijon Dressing:
3tablespoonsextra-virgin olive oil
1 1/2tablespoonsraw apple cider vinegarlike Bragg's (with the Mother)
1tablespoonDijon mustard
2 teaspoonsraw honey
Sea salt and black pepper to taste
Instructions
Combine all the Honey Dijon dressing ingredients in a mason jar. Shake and set aside.
Prep kale by washing and de-stemming. Tear the leaves into small pieces and place into a large bowl.
Pour two teaspoons of olive oil and a light sprinkle of sea salt over the kale and massage thoroughly with your hands, until the kale is nice and limp.
Add the dried cherries, sunflower seeds, and goat cheese. Lightly toss in the homemade honey dijon dressing and enjoy!
