Reserve half a cup of shredded coconut in a shallow bowl for rolling bites after mixing.
Place the walnuts and medjool dates in food processor and pulse to chop up and break down.
Add the remaining ingredients and process until fully combined. The mixture will start to come together nicely.
With a tablespoon, form mixture into balls about one-inch in size. Roll in the reserved shredded coconut. Coat bites completely and transfer to a glass dish and refrigerate for a few hours or overnight. Best to keep chilled.
