Calling all carrot cake fans! These are absolutely divine! Energy bites are the perfect afternoon pick-me-up, pre-workout snack, or after dinner dessert any day of the week. They satisfy without making you feel guilty, bloated, or sleepy afterwards! 🙂

Besides tasting amazing, these raw bites also have anti-inflammatory properties. The turmeric, hemp hearts, walnuts, and raw honey provide this support and health benefit.

These are completely raw, dairy-free, gluten-free and grain-free. If you want to make them vegan, just swap out the raw honey for pure maple syrup or coconut nectar. Bites like these are great because you can really make them into something that appeals and works for your needs. They store very well in the fridge or freezer! Enjoy!

Raw Anti-Inflammatory Carrot Cake Bites

Servings 18 bites

Ingredients
  

  • 1 cup unsweetened shredded coconut (divided)
  • 6 Medjool dates pitted
  • 3/4 cup walnuts
  • 1/2 cup grated carrot
  • 1/4 cup hemp hearts I like Manitoba Harvest brand
  • 1/4 cup raw unpasteurized honey (or coconut nectar or maple syrup for vegan)
  • 1 tsp pure vanilla extract
  • 1 tsp ground cinnamon
  • 1/2 tsp freshly grated nutmeg
  • 1/4 tsp ground cloves
  • 1/3 tsp ground turmeric preferably organic
  • 1/8 tsp pink Himalayan sea salt

Instructions
 

  • Reserve half a cup of shredded coconut in a shallow bowl for rolling bites after mixing.
  • Place the walnuts and medjool dates in food processor and pulse to chop up and break down.
  • Add the remaining ingredients and process until fully combined. The mixture will start to come together nicely.
  • With a tablespoon, form mixture into balls about one-inch in size. Roll in the reserved shredded coconut. Coat bites completely and transfer to a glass dish and refrigerate for a few hours or overnight. Best to keep chilled.
