Homemade Granola

I love this granola with coconut yogurt, ground flaxseed, and chopped up apples!

Cook Time 30 minutes mins
- 1 1/2 cup rolled oats
- 1/2 cup shredded unsweetened coconut
- 2/3 cup any combination of raw seed or chopped nuts I like chopped pecans, walnuts, and pumpkin seeds
- 1 tbsp chia seeds
- 1 teaspoon pure vanilla extract
- 1/2 teaspoon ground cinnamon optional
- 1/8 teaspoon pink Himalayan sea salt
- 3 tbsp pure maple syrup or honey
- 1 tbsp virgin coconut oil
Preheat oven to 300 degrees F.
Line a baking sheet with parchment paper, set aside.
Combine all dry ingredients in a medium bowl.
Add vanilla extract, coconut oil, and maple syrup. Stir to combine.
Spread on parchment-lined baking sheet and bake for approx 25 minutes, stirring the granola a couple of times.
Once granola has cooled, store in an airtight glass container
