Homemade Granola

I love this granola with coconut yogurt, ground flaxseed, and chopped up apples!
Prep Time 5 minutes
Cook Time 30 minutes

Ingredients
  

  • 1 1/2 cup rolled oats
  • 1/2 cup shredded unsweetened coconut
  • 2/3 cup any combination of raw seed or chopped nuts I like chopped pecans, walnuts, and pumpkin seeds
  • 1 tbsp chia seeds
  • 1 teaspoon pure vanilla extract
  • 1/2 teaspoon ground cinnamon optional
  • 1/8 teaspoon pink Himalayan sea salt
  • 3 tbsp pure maple syrup or honey
  • 1 tbsp virgin coconut oil

Instructions
 

  • Preheat oven to 300 degrees F.
  • Line a baking sheet with parchment paper, set aside.
  • Combine all dry ingredients in a medium bowl.
  • Add vanilla extract, coconut oil, and maple syrup. Stir to combine.
  • Spread on parchment-lined baking sheet and bake for approx 25 minutes, stirring the granola a couple of times.
  • Once granola has cooled, store in an airtight glass container
