Who doesn’t love granola? It’s crunchy, sweet, and extremely satisfying. Although there are some pretty decent brands available today, most commercial varieties are loaded with sugar and processed vegetable oils. I’ve been making my own for years and haven’t looked back!

Homemade Granola

I love this granola with coconut yogurt, ground flaxseed, and chopped up apples!
Prep Time 5 minutes
Cook Time 30 minutes

Ingredients
  

  • 1 1/2 cup rolled oats
  • 1/2 cup shredded unsweetened coconut
  • 2/3 cup any combination of raw seed or chopped nuts I like chopped pecans, walnuts, and pumpkin seeds
  • 1 tbsp chia seeds
  • 1 teaspoon pure vanilla extract
  • 1/2 teaspoon ground cinnamon optional
  • 1/8 teaspoon pink Himalayan sea salt
  • 3 tbsp pure maple syrup or honey
  • 1 tbsp virgin coconut oil

Instructions
 

  • Preheat oven to 300 degrees F.
  • Line a baking sheet with parchment paper, set aside.
  • Combine all dry ingredients in a medium bowl.
  • Add vanilla extract, coconut oil, and maple syrup. Stir to combine.
  • Spread on parchment-lined baking sheet and bake for approx 25 minutes, stirring the granola a couple of times.
  • Once granola has cooled, store in an airtight glass container

I make this recipe every two to three weeks. On the weekends, I find it’s a nice change from my usual breakfast smoothie. On weeknights, it’s become the occasional bedtime snack (just a tablespoon or two with my coconut yogurt/milk is more than enough.

I love three things about this recipe:

  1. I know and recognize every single ingredient in it.
  2. It’s versatile. I usually change up the mixture of nuts, seeds, and dried fruit to keep it interesting. Sometimes, I get a little crazy and add raw cacao nibs and cinnamon! 😉
  3. I can pull all the ingredients together in literally 5 minutes…by the time my oven beeps on preheated temperature, I’ve got the granola on a sheet pan ready to slide into the oven!
