Over the years, I have had many clients ask me about healthy sauces and dressings. I totally understand why the question comes up. People want their food to taste good. And, when it comes to eating healthy, there’s a lingering misconception that healthy foods are “bland” and “lack flavor.” For the record, I don’t believe healthy foods are bland or lack flavor. I do, however, believe that people don’t realize that they CAN add things to enhance the flavors of those said healthy foods they are trying to eat more of., i.e., olive oil, lemon, spices, fresh/dried herbs, butter (yes, real butter!)…
Enter the BEST Italian Salad Dressing. I LOVE this dressing! I usually use it in a pasta salad, but honestly, it can go on anything – even grilled vegetables and chicken!
I created this recipe as a healthy alternative to the commercial bottled Italian salad dressings. You know the ones: Kraft, Wishbone, Hidden Valley, etc. This way, I have more control over the quality of ingredients used to create something that not only tastes good but is good for me and is aligned with my wellness goals.
The BEST Italian Salad Dressing
Ingredients
- 2 1/2 tbsp white vinegar
- 1/2 tbsp raw or local honey
- 1/2 tbsp Dijon mustard
- 1 tsp organic mayo
- 1 garlic clove pressed
- 1/4 + 1/8 tsp sea salt
- 1/8 tsp black pepper
- 1/2 tsp red pepper flakes
- 1/2 cup extra-virgin olive oil
Instructions
- In a mixing bowl, add all the ingredients, except the olive oil.
- Slowly add the olive oil into the bowl while whisking until emulsified.
- Add to a pasta or artichoke salad. Store any excess dressing in a jar in the fridge.
UH, YUM!!!! and so easy! Is it best to not keep it in fridge?
