Eat your greens! Sound familiar? Salads and steamed vegetables can get pretty boring if this is your scope of vegetable selection, so here is an awesome way to enjoy those veggies…saute them! It’s quick, easy, and sooo tasty!!

Balsamic Kale Greens

This recipe is versatile. Try it with Swiss chard, spinach, or even dandelion greens!
Servings 4

Ingredients
  

  • 1 bunch kale washed, de-stemmed and chopped
  • 1 tablespoon extra-virgin olive or avocado oil
  • 2 small garlic cloves sliced or crushed
  • 1 tablespoon balsamic vinegar
  • Sea salt and black pepper to taste

Instructions
 

  • Heat oil in skillet over medium-heat. Add garlic and saute for about a minute, until fragrant. Add the kale (or Swiss chard). Cover and steam for about 4 minutes, until greens begin to wilt.
  • Remove pan from heat and add balsamic vinegar. Stir and season with sea salt and pepper. Enjoy immediately!
