We already know the extraordinary health benefits of adding greens to your morning smoothie, but how about cauliflower? Stay with me! I promise you will be satisfied!! Adding frozen cauliflower (along with those greens of course) ups the health benefits of your smoothie while providing a wonderfully satisfying creamy texture. You won’t taste the cauliflower (promise!).

Try this recipe…absolutely yummy! I scarfed my smoothie down this morning along with 2 homemade egg muffins. If you prefer, you can add a scoop of quality protein powder instead of the eggs.

Cauliflower Blueberry Smoothie

A wonderfully satisfying twist on the morning smoothie!
Servings 2

Ingredients
  

  • 1/2 cup frozen cauliflower florets
  • 1/2 cup loosely packed greens of choice e.g. spinach, kale
  • 3/4 cup frozen blueberries
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 2 tablespoons hulled hemp hearts or ground flax or chia seeds
  • 1 ripe banana
  • Splash vanilla extract
  • 1 cup unsweetened almond milk plus extra water to desired consistency

Instructions
 

  • Add all ingredients to blender and add a cup or so water, then blend until very smooth (if you have a lower quality blender, do the cauliflower and greens with the water first, then add the remaining ingredients and blend until smooth).
  • Add more water until you reach desired consistency, and serve immediately.

Notes

You'll need to add extra staying power to this smoothie if using it as a meal. Enjoy a couple of eggs on the side, a homemade salmon cake, or just add a scoop of quality protein powder to the smoothie recipe. Enjoy!
