These little gems are power-packed with nutrients! And, on top of that…they taste pretty darn good too! The base of most energy-ball-type recipes is typically dates – they’re moist and super sweet – which make them ideal as a binding agent in these types of recipes. In this recipe [instead of using only dates] I used less and supplemented the remainder with dried figs. This little adjustment helps balance out some of the sugars as dried figs contain almost 7-10 grams less sugar than dates by weight.

Ingredients
  

  • 3/4 cup dates soak in warm water for 10 minutes to soften if needed
  • 3/4 cup dried figs (soak in warm water for 10 minutes to soften if needed
  • 1/2 cup raw cashews
  • 1/2 cup raw almonds
  • 2 Tablespoons chia seeds
  • 2 Tablespoons cacao powder
  • 1 Tablespoon raw cacao nibs
  • Add a booster optional: 1-2 Tablespoons Spirulina, Supergreens powder, Lucuma powder, Pomegrante or Acai powder, Camu camu powder

Instructions
 

  • Place all ingredients in a large, high power food processor and blend until mixture comes together (it will be crumbly at first). You may need to add a tablespoon of water (or two) if the mixture is too crumbly and dry.
  • Roll into balls and refrigerate.

Depending on the variety and weight, two to three dates contain about 23 grams of sugar, while the same amount of dried figs contain only 13 grams. That’s a pretty significant difference!

What I also love about this recipe (beside how it tastes 🙂 ) is that it is super versatile. So, if you are allergic to any cashews and almonds, for example, just swap them out for a different type of nut (like macadamia, coconut, or pecans) or use sunflower and pumpkin seeds instead.
